Drunken CauliflowerSubmitted by: HALFFAST
IntroductionAdapted from recipe for Creamed Cauliflower from the Whole Plants Cookbook. I LOVE this cookbook! Adapted from recipe for Creamed Cauliflower from the Whole Plants Cookbook. I LOVE this cookbook!
-1 head cauliflower (broken up into 4 cups)
-1 cup veg broth
-3/4 cup raw cashews
-5 Tbsp nutritional yeast
-1/2 cup non-dairy milk
-3 Tbsp white miso
-1 Tbsp dijon mustard
-1/2 cup white wine
salt and pepper to taste (optional- I don't use either)
By adding the wine at the end (I forgot about it the first time I made this) instead of adding it to the saucepan, I caught a buzz off this (I'm not a drinker) - Hence my calling it drunken cauliflower ;)

3. Pour mixture into saucepan and bring to a boil. Reduce heat to low and cook, stirring constantly, until sauce thickens
4. When cauliflower is cooked, remove from heat and place in large serving bowl. (You can leave it like this or mash it up - I like it better mashed up)
5. Pour sauce over cauliflower. Add wine. Mix it all together and serve.
