bell pepper sausage scramble

Introduction

delicious on toast, or alone. great for any meal, quick and easy to prepare! delicious on toast, or alone. great for any meal, quick and easy to prepare!
Number of Servings: 3

Ingredients

    1 tbsp. olive oil
    1 medium bell pepper, diced
    1/2 medium onion, diced
    3 large mushrooms, sliced
    1 lean italian pork sausage, chopped
    1/2 cup simply egg whites, or 2 fresh egg whites
    1 large egg
    1/4 cup milk
    dash of pepper
    dash of salt

Directions

Heat a non-stick skillet on medium temperature. add olive oil. (you can substitute oil for non stick spray, but i find oil works best)
saute peppers, mushrooms and onions on medium heat until partially cooked. add chopped sausage and stir, flipping and mixing until sausage and veggies are fully cooked.
in a bowl (or cup) mix egg, egg whites, milk, salt and pepper. pour over veggie and sausages, mixing constantly until egg is fully cooked.

Serve alone or on toast :)

Serving Size: makes 3 1 - cup servings
