Homemade Hash Browns

Introduction

Ingredients

    2 potatoes
    1/4 c. olive oil
    salt
    pepper

Tips

Potatoes may need to be cooked in batches, depending on size of the pan.


Directions

Peel potatoes and grate on cheese grater. Spread grated potatoes in a thin layer on paper towels. Cover with 2 more paper towels. Moisture needs to be drawn out of the potatoes before cooking. If necessary, change out the paper towels to dry ones.

Heat oil in nonstick pan over medium heat. Add potatoes into a thin layer and cook for 10 minutes. Salt and pepper to taste. Flip the potatoes and cook for another 10 minutes. Salt and pepper again to taste if desired.
