Call it a fake eggs benedict - sauteed honey ham rather than Canadian bacon, no hollandaise sauce, less fat and calories - but a quick and filling breakfast. Call it a fake eggs benedict - sauteed honey ham rather than Canadian bacon, no hollandaise sauce, less fat and calories - but a quick and filling breakfast.
Number of Servings: 1

Ingredients

    1/2 English muffin
    1 large egg
    2 slices thin-sliced deli ham (this recipe uses honey ham as that's what I most often have in the fridge)
    3 pats butter
    salt and pepper to taste

Tips

Serve with a side of fruit.


Directions

Cut ham slices in quarters, stack and slice into thin strips. Heat 1 pat butter over medium heat. Add ham and saute. Set aside.

Toast muffin.

Heat 1 pat butter in nonstick pan over medium heat. Crack egg and fry till cooked over medium. Salt and pepper to taste.

Butter muffin. Top with ham strips and then with egg.
