Breakfast Stirfry

Introduction

I prefer brown rice but if you have left over white rice this is a good way to use it. I prefer brown rice but if you have left over white rice this is a good way to use it.

Ingredients

    1 c. rice
    .25 c. bell pepper diced
    .25 c. ham diced
    .25 c. spinach diced
    4 Tbs. onion diced
    2 eggs beaten
    2 Tbs. olive oil

Directions

Put oil in skillet and add diced vegetables. Saute for about 5 minutes. Add ham cook 3 min. Add rice cook another 5 to 7 minutes and serve hot.

Serving Size: 3 servings of about 3/4 cup
