Ingredients

1 c. rice
.25 c. bell pepper diced
.25 c. ham diced
.25 c. spinach diced
4 Tbs. onion diced
2 eggs beaten
2 Tbs. olive oil
Tips
Directions
Put oil in skillet and add diced vegetables. Saute for about 5 minutes. Add ham cook 3 min. Add rice cook another 5 to 7 minutes and serve hot.
