IntroductionA creamy soup which is nothing like French Onion Soup. A creamy soup which is nothing like French Onion Soup.
Onions, raw, 1 medium (2-1/2" dia)
Flour, white, 0.25 cup
Butter, salted, 1 pat (1" sq, 1/3" high)
chicken bouillion (1 cube), 1 serving
Nutmeg, ground, 1 tsp
Milk, 2%, 2 cup
Water, tap, 1 cup (8 fl oz)
Low fat cream cheese, 1 tbsp
Seasoning to taste
Next stir in one tablespoon of plain white flour, stirring constantly, and cook on lowest heat for one minute.
Then add half a pint of hot but not boiling water. Cook for 10 minutes. Add 2 cups of milk, nutmeg and stock cube and cook for another 20 minutes. Season to taste.
Blend until smooth.
Top each serving with about a teaspoonful of cream cheese. I used light garlic and herb.
