Jambalaya for City Folk

Introduction

I didn't have the rice this recipe called for so used quinoa instead. We don't like okra, so will make over this recipe by exchanging okra for green beans next time, and will probably add more bell peppers. Stay tuned. Number of Servings: 4

Ingredients

    1/2 onion
    2 celery stalks
    1 red bell pepper
    1 green bell pepper

    1 can tomatoes, diced
    10 oz frozen okra or 2 c. Copped fresh baby okra
    1 c. Quinoa, uncooked
    2 c. Water

    2 cloves garlic, minced
    1 t. Salt
    1 t. Chili powder, or more if you like it hot
    1 t. Grapeseed oil

Tips

Can add all ingredients, except quinoa and water, to a freezer container. Then when ready for a quick meal, defrost and continue with step 2, adding rice and water at that time.


Directions

1. Cut fresh veggies into bite sizes or strips.

2. Add all ingredients to a pot.

3. Bring to a boil, then stir and adjust heat to low.

4. Cover and cook 30-45 minutes, until quinoa is tender and fluffy.

5. Let stand 5 minutes uncovered before serving.
