This is an amazing soup. Whenever I announce this is what I'm making for dinner, the house gives a collective "yay!!!" Hope you enjoy as much as my family does. This is an amazing soup. Whenever I announce this is what I'm making for dinner, the house gives a collective "yay!!!" Hope you enjoy as much as my family does.
Number of Servings: 8

Ingredients

    1 grated carrot
    1 diced onion
    1 diced celery stalk
    1 tbsp olive oil
    1 cup finely diced fresh baby spinach
    3 strips bacon
    46 oz. beef broth (can add more to desired consistency)
    4 cans black beans, drained and rinsed
    1 12 oz can diced tomatoes
    1/2 tsp cumin
    1/2 tsp cayenne pepper
    1 tsp ground black pepper
    1/4 tsp ground white pepper
    1/2 tsp paprika
    2 tbsp crystals hot sauce (or any other mild favorite of your own that is similar).
    1/3 cup quick cook barley

Tips

Chop bacon for garnish while soup is cooking. May also top with sour cream and shredded cheese. Normally I serve it with all these toppings and fritos!

Directions

Empty cans of black beans in a colander and rinse, set aside. Fry 3 slices bacon and set aside. Grate and dice carrot, onion, and celery, saute in olive oil 4-5 minutes until evident carrots are beginning to caramelize. Saute finely chopped spinach in left over bacon grease 2 minutes. Combine all sautéed vegetables in pot. Add drained black beans, canned tomatoes, beef broth and spices and hot sauce to pot with vegetables. Bring to boil, reduce heat and cook on medium low for about 15-20 minutes. Add barley and cook an additional 10 minutes.
