Introduction

Hubby calls these my "Scooby Snacks". I make a batch at a time (12) and HIDE them because the hubby will eat them ALL. I kept forgetting to take my daily teaspoon of coconut oil and decided to dream up a recipe that would make them easy to add to my daily routine. I added in some ground flax seeds that give it a little more texture and of course cocoa because the antioxidants in chocolate is good for you! Since some Sparkers are Vegan, I used a non-dairy creamer. The International Delights Salted Caramel Mocha is really good but you could use any flavor you like. Ingredients

    3 T. coconut oil (I use the high quality Nutiva brand)
    3 T. unsweetened cocoa (cheap stuff is fine)
    3 T. sugar
    3 T. ground flax seed
    3 T. non dairy creamer (LOVE the salted caramel mocha)
    .5 t. vanilla extract

Tips

I saved a plastic tray with 12 mini cups that some frozen hors d'oeuvres came in. You could also use a cookie sheet lined with plastic wrap.


Directions

Melt oil over low heat. Add sugar, cocoa and creamer and stir constantly until sugar is dissolved.

Add in ground flax seed and extract. Beat until mixture begins to thicken.

Let cool for about 2 - 3 minutes. Place mixture into one "corner" of a freezer plastic bag (you can use a regular plastic bag, but they are not as strong). Snip the tip of the filled corner and carefully squirt into 12 pieces dividing equally. They end up looking like little dog turds and that is why the hubby calls them Scooby Snacks. LOL

I like to relax with one at the end of the day. I do not feel badly because they are good for you as long as you refrain from gobbling the entire batch.

Refrigerate. Once cooled and hardened, you can transfer to an airtight container and hide it from everyone else in your household.
