Grainless Paleo Pancakes

Introduction

Number of Servings: 2

Ingredients

    2 eggs
    1/2 cup unsweetened applesauce (I use homemade)
    1/2 cup nut butter (I use almond)
    1/4 t cinnamon
    splash nutmeg
    1/4 t madagascar bourbon vanilla
    1 T ground flaxseed

Tips

This is a high fat, high protein meal with lower carbs. If you're counting fat grams, this isn't for you. Paleo focuses on good fats, high protein, quality veggies and moderate amount of fruit, 2 oz or less of nuts a day and a treat of dark chocolate now & again.


Directions

Mix all ingredients together well. Put a bit of oil on a hot griddle--either coconut oil or olive oil. Spread batter on the hot griddle in pancake shapes and watch carefully! They cook up differently than grain-based pancakes. Flip gingerly and finish the cooking on the 2nd side.
