Turkish Red Lentil Soup

Ingredients

1.5 cup red lentils (could be found at Middle Eastern, Mediterranean or Indian markets)
1 big potato (Peeled and grated)
1 big carrot (Peeled and grated)
1 white onion (cut into 2)
8 cups water
2 tbsp canola oil
1 tbsp tomato-paste
2 tbsp mint
Salt to taste
Tips
Take the time to find red lentils-- they break down into such a smooth consistency and are so much better than brown or green ones in this recipe.
Directions
Put the carrots, potato, onion, lentils, water and salt into the pot you're cooking in. Turn down the heat after it starts boiling. Simmer until lentils break down (maybe 45 minutes
After turning off, throwaway the onion pieces, and mix the rest with a blender to desired smoothness. Salt to taste.
Then heat the canola oil, and add the tomato-paste. and fry them together for 2 minutes. Turn off the heat, and then add the mint and stir them for a couple minutes (Peppermint get burned if the fire is on, be careful).
Then pour this fried tomato-paste and peppermint mix into your soup. Stir everything. It would be delicious if you put some lemon juice and pepper while serving.
