No Fat Ratatouille

Ingredients

    8 cups eggplant, cubed
    6 cups zucchini, cubed
    2 cups cippiolini onions, whole
    3 tsp. chopped garlic
    1/2 tsp. dried oregano
    1/2 tsp. dried basil
    1/2 tsp. dried rosemary
    1/2 tsp. dried thyme
    2 cans Italian-seasoned diced tomatoes
    3 cups water
    1 tsp. sea salt
    1 tsp. cracked black pepper

Tips

A 6-oz can of tomatoe paste can be added with the tomatoes, zucchini, and water if desired.


Directions

Brown onions slightly in large saucepan over high heat. Add garlic; continue cooking until garlic releases its aroma. Reduce to medium heat. Add eggplant and dried herbs; cook until almost dry. Add tomatoes, zucchini, and water; bring to simmer. Stir occassionally until liquid reduces. Add salt and pepper; adjust to preferred taste.

Serving Size: makes approximately 12 1-cup servings
