I just dug through my refrigerator until I came up with this! I had to use all those veggies to make something incredible and I'm making it into a recipe so that I can track it easily on my food log. I had to use all those veggies to make something incredible and I'm making it into a recipe so that I can track it easily on my food log.Number of Servings: 12
Ingredients

1 pound beef stew meat
4 cups beef broth
1 cup water
1 can diced tomatoes
1 can sweet corn, drained
1 can green beans, drained
2 large yellow squash, diced
3 large celery sticks, diced
3 large carrots, sliced
1 head of broccoli, chopped
2 small white onions, chopped
1 cup mushrooms, sliced
1 green bell pepper, chopped
Tips
Directions
Brown the stew meat in a large stock pot. Season with salt to taste, if you prefer (I didn't). Add the onions, celery and carrots and cook until soft. Add the beef broth and water and simmer. While cooking, chop veggies and add to the pot as you finish chopping. Cover the pot and allow to simmer on low heat for about 30 minutes, or until you can't stand it anymore!
