Hawaiian Chicken

Number of Servings: 4

Ingredients

    2 Chicken breasts, boned and skinned
    1/4 frozen orange juice, thawed
    1 egg, beaten
    1/4 t ground ginger
    1/2 c Rice Chex, crushed
    1/3 c dried coconut

Directions

Preheat oven to 375'. Mix orange juice, egg and ginger in bowl. Combine crushed Rice Chex and coconut (may be crushed finer in food processor or blender). Dip chicken into liquid mixture then into dry mix. Place signle layer on a baking pan. Bake for about 35 minutes, or until the chicken is cooked and crust is brown.
Serves 4.
