Laura's Pistachio Chicken

Introduction

Quick and delicious! My friend tells me it's from The South Beach cookbook. Quick and delicious! My friend tells me it's from The South Beach cookbook.
Number of Servings: 4

Ingredients

    4 boneless, skinless chicken breasts, approx.
    4.75 oz. each.
    3/4 cup shelled pistachio nuts, chopped
    1 tsp. black pepper (optional)
    1 Tbsp. Mrs. Dash's seasoning blend
    (optional)

Directions

Turn oven to 375 degrees. Chop pistachio nuts, place in a shallow bowl. Add seasonings and mix well. Coat skillet with extra virgin olive oil. Rinse chicken breasts, press each piece into the nut mixture on both sides and put on skillet. Brown both sides approximately 8 minutes each. Transfer chicken to a shallow baking pan and cook for 15 minutes.

Makes 4 servings.

You can substitute different nuts - walnuts, pecans, etc. You can also add more seasonings to your taste.
