Corn bread tamale pie (6 servings / 13x9 pan)

Introduction

based on the Joy of Cooking recipe, for my family's logging purposes based on the Joy of Cooking recipe, for my family's logging purposes
Number of Servings: 6

Ingredients

    Filling:
    1 lb ground beef
    1 medium onion
    1 can black beans (~1 cup)
    1 c drained canned corn
    1 c tomato sauce
    1 c chicken broth
    1 Tbsp chili
    1/2 tsp cumin
    1 tsp salt
    1/4 tsp pepper
    Cornbread mixture:
    3/4 c cornmeal
    1 Tbsp flour
    1 Tbsp sugar
    1.5 tsp baking powder
    1/2 tsp salt
    1 egg
    1/3 c milk
    1 Tbsp vegetable oil

Directions

Saute beef & onion until well browned. Add remaining filling ingredients, simmer 15 minutes.
Mix dry ingredients of cornmeal. Add wet ingredients, mix well. Fill casserole pan with filling, then top with cornmeal dough. Bake at 400 for 20-25 minutes or until cornbread is browned.

Serving Size: Makes 6 servings (13x9 pan)
