Spinach, fresh, 2 cup
Mushrooms, fresh, 1 cup diced
Yellow Bell Pepper 1/2 diced
Trader Joe's Homestyle Salsa Especial medium, 2 tbsp
Egg 7 medium
Scallions 2 medium
Canola Oil 1tsp
Trader Joe's Black Forrest Ham Uncured, 8 oz
Mrs. Dash Original Blend, 1 tsp
1. Preheat the oven to 400 degrees F. Coat 10 muffin cups (tin) with cooking spray. Set aside.
2.Position 1 slice of ham in each of the muffin cups. Place diced mushrooms in bottom of the cup and diced yellow bell pepper on top of mushroom.
3.Place spinach, eggs, and salsa in a blender. Blend. Pour on top of mushrooms and bell pepper.
4.Place chopped tomato and scallions on top of egg mixture. Season with Mrs. Dash and pepper.
5.Bake about 20 minutes or to desired degree of doneness. Carefully remove the egg cups using the ham to lift onto serving plates.
