Spinach & Feta Quiche

Number of Servings: 8

Ingredients


    1= 9" Pie crust, frozen, ready-to-bake
    1 pkg=Spinach, frozen (10 oz)
    8=Eggs
    1/4 cup=Milk, 2%
    1/4 cup=Feta Cheese, crumbled
    1 cup=Cheddar Cheese, shredded
    1/4 cup=Scallions, chopped
    1 cup=Cottage Cheese, 1% Milkfat
    salt
    pepper

Directions

bake crust for 5 mins in 350 oven

-beat egg & milk
-add remaining ingredients except cheddar cheese & mix well
-pour into pie crust
-bake in 375 oven until set (30-40 mins)
-once set, add cheddar cheese & continue to bake until cheese is melted

***squeeze as much liquid from the frozen spinach as you can. this will ensure a dryer quiche***
