Turkey Stir-Fry

Ingredients

1oz chicken broth (low-sodium or homemade works well)
1 lb turkey breast, cut into strips or chunks
1 lbs Bird's Eye Asian Stir-Fry (frozen stir-fry vegetable mix) do NOT add any sauce mixes that may come with the veggies
1 tablespoon soy sauce
1 tablespoon lime juice
5 tablespoons coconut milk
1 tablespoon crunchy peanut butter
Directions
Heat chicken broth in a wok or other non-stick heavy pan. Add turkey, Stir-fry over a med-high heat for 5-6 minutes, until the turkey is lightly browned.
Add the veggies, then stir-fry for 3-4 minutes more.
Mix soy sauce, lime juice, milk and peanut butter, then add to the pan and cook, stirring, for 1-2 minutes more.
Season to taste and serve hot, with rice or noodles.
Makes approximately 4 - 1 cup servings
