Beef and Vegetable Barley Soup

Introduction

very basic vegetable soup very basic vegetable soup
Number of Servings: 8

Ingredients

    Beef stock or broth
    carrots
    onions
    celery
    cabbage
    salt
    pepper
    canned tomatoes
    cooked barley
    garlic, chopped
    olive oil

Tips

could easily make this with chicken or veggie stock as well. Try any number of vegetables.


Directions

chop all veg into bite size pieces, dump in pot with olive oil. Sweat over low heat until all veg is tender. Cook barley according to package directions. Add stock, barley, salt and pepper to taste, simmer 30 minutes.

Serving Size: makes about eight 2-cup servings
