Introduction

This super easy soup is really high in nutrition, for very few calories. Makes a great meal with some rice or crackers.

Number of Servings: 10

Ingredients

    2 lb. chopped Broccoli, frozen
    1 lb. Mixed Vegetables, frozen
    10 oz Spinach, frozen
    2 quarts Chicken, stock, organic, boxed (Costco),
    Garlic powder, to taste
    Pepper, black, to taste

    Parmesan cheese (optional for topping - not included in nutrition calculation)

Directions

Put all ingredients in a large stock pot. Bring to boil, then simmer for about 15 minutes. Use immersion blender to blend to desired consistency.

Serving Size: makes 9-10 servings (2 cup each)
