Quick Chicken Paprika

Introduction

Number of Servings: 4

Ingredients

    1 tablespoon canola oil
    1 large white or yellow onion, chopped
    1 red bell pepper, chopped
    1 pound boneless, skinless chicken breast, excess fat removed and chopped into bite-size pieces
    1 tablespoon paprika
    1/4 cup low-sodium or homemade chicken broth
    2 ounces fat-free plain Greek yogurt
    2 cups prepared brown rice
    chopped fresh parsley, optional, for garnish

Tips

Prefer a meatless meal? Swap in tempeh or chickpeas for the chicken.


Directions

Place a large skillet over medium-high heat and add the oil. Add the onion the skillet and saute for three minutes, then add the red pepper. After two minutes, add the chicken and the paprika. Cook, stirring often, until the chicken is no longer pink and reaches an internal temperature of 165 degrees Fahrenheit through, about five minutes.
Add the broth to the pan and use the back of a wooden spoon or spatula to scrape up any bits that might have stuck.
Remove from heat and stir in the yogurt.
Serve immediately, over the rice. Garnish with fresh parsley if desired.

Portion size: 1/2 cup rice, 3 ounces chicken and about 1/2 cup veggies

    Why would you use a rice that is pretty much devoid of nutrition? I am amazed as the supposedly healthy recipes that tout such garbage. This stuff has been so processed that anything nutritional in it has been removed. I will try the chicken but use a healthier grain alternative. Deb - 2/19/13

    If you are Bohemian like I am or some other ethnic like Slovak then this is really not Chicken Paprika. It would be served with dumplings egg or potato. It would not have bell pepper in it. While the yogurt is good, sour cream would have been used. I would leave out the peppers. - 2/19/13

    I tried to make this from memory last night and didn't remember the chicken broth. I used turkey kielbasa for the meat and pasta instead of rice, but I give the recipe a big thumbs up! - 1/27/13

  • This was very tasty and I was able to cut the ingredients so I only made two servings. This was helpful as I live alone and don't want to eat the same thing more than a couple of times. - 12/31/13

  • While the chicken part of the recipe has been "healthified" I do agree that using white rice has no nutritional value AT ALL and at the very least we should try to us a mix of white and brown rice if our families will not tolerate all brown - that is how I eventually got my family to all brown. - 3/27/13
