Easy Creamy Broccoli Soup

Introduction

I like putting grated cheese on individual servings to control them amount and because I think it tastes better than cooking it into the soup. I like putting grated cheese on individual servings to control them amount and because I think it tastes better than cooking it into the soup.
Number of Servings: 6

Ingredients

    4 cups chicken broth
    1.5 cups chopped onion
    5 cups fresh broccoli, chopped
    4 cups nonfat milk
    1 tsp garlic powder
    salt and pepper to taste

Directions

Steam the broccoli and onion in the chicken broth until soft (about 25 minutes). Run through blender in batches and put back into pot. Add milk and seasonings and heat through almost to boiling. Mix cornstarch with enough water to make a paste and add to soup, cooking until it thickens. Season with salt, pepper and garlic powder to taste.

Serving Size: Makes 6 generous servings
