Number of Servings: 3

Ingredients

    1/2 red onion, thinly sliced
    1 lb boneless chicken breasts, cut into halves
    1 cup diced tomatoes, drained
    1/4 cup light balsamic vinaigrette
    1/8 tsp garlic powder
    1/4 cup shredded parmesan cheese (I used 4 cheese blend)


Tips

I replaced balsamic vinaigrette with half balsamic vinegar and half italian dressing.


Directions

Place onions in a sprayed baking dish; top w/chicken. Combine tomatoes, vinaigrette & garlic powder; pour over chicken. Sprinkle w/cheese.

Bake 30 mins @ 425.
