Easy Cheesy Omelet

Introduction

Fast, easy no nonsense omelet for very few calories. Yummy with a side of fruit or smoothie. Fast, easy no nonsense omelet for very few calories. Yummy with a side of fruit or smoothie.
Number of Servings: 1

Ingredients

    1/2 cup egg beaters, southwestern or other variety
    2% cheese slice (whatever type desired)
    1-2 tlbs onion, finely chopped
    0.25 cup mushrooms, sliced
    seasoning as desired

    optional: any additional desired veggies

Directions

Add a tablespoon or two of water to nonstick pan over medium heat. Saute' onions in water until they soften. Pour egg beaters in pan and cover. When egg cooked through add mushrooms (and any other vegetables desired) and one slice of cheese on one half of omelet. Season as desired. Flip over in half and let cook additional one minute or until cheese is melted.

Serving Size: makes one omelet
