Weight Loss Soup

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 5 clove
    low sodium chicken broth, 4 cup
    4 cups water
    *Summer Squash, 1 cup, sliced
    Broccoli, fresh, 2 cup, chopped
    Kale, 1 cup, chopped
    Green Beans (Italian), 1 cup
    Carrots, raw, 1 cup, chopped
    Celery, raw, .5 cup, diced
    Seasoning Mix: 1 bay leaf, 1 tsp. dried thyme, 2 tsp. sea salt, 1/2 tsp. dried red pepper flakes, 1/2 tsp. cayenne pepper
    Chicken Breast cooked, diced, 1 lb.
    *Lundberg Wild Blend Brown Rice-1 cup cooked
    1/2 cup fresh chopped parsley
    Lemon wedges

Directions

In a large pot, heat oil. Add onion and saute until softened, about 5 min. Add garlic and saute until fragrant, about 1 min. Add broth, water, vegetables, and seasoning mix. Bring to boil. Reduce heat, cover, and simmer for about 20 min. Add chicken and rice, and simmer for 10 more minutes. Remove bay leaf. Stir in fresh parsley. Season soup with salt and pepper to taste. Ladle into bowls, spritz with lemon juice and serve.
