Introduction

Number of Servings: 9

Ingredients

    Cooking spray
    1 container Eggbeaters
    1/2 c. frozen spinach, thawed and squeezed dry
    1/2 c. frozen pepper/onion blend, thawed and pat dry
    5 wedges Laughing Cow cheese (any flavor)
    Salt and pepper, to taste

Directions

Spray 9 muffin tins with cooking spray. Whisk eggs in bowl until frothy. Pour eggs into greased muffin cups half way (there may be extra egg, save this). Mix together the dry spinach and dry peppers/onions. Add a pinch to each muffin cup. Cut cheese into chunks and add the chunks evenly to each cup. Top with any remaining egg mix. Bake at 325 for 15 mins or until bouncy when touched

Serving Size: Yield: 9 frittatas.
