Ingredients

    5 large eggs, beaten
    1/4 c shredded cheddar cheese
    1 avocado, mashed
    1/4 c tomato, chopped
    3 large mushrooms, diced
    1/4 c chopped mushrooms
    6 slices of fresh red sweet pepper (bell)

Directions

Preheat oven to 350 degrees.
Mix all ingredients in with eggs.
Lightly spray six large muffin cups.
Spoon egg mixture into cups.
Place muffin tin on a baking sheet.
Bake until eggs are as done as desired. Check after 15 minutes, and continue to check every few minutes after. I like mine very done - about 25 minutes
