1 tsp olive oil
1 cup diced onion
2 full skinless boneless chicken breast (4 pcs)
1/2 cup white wine
1 cup fresh mushrooms, sliced
1/2 cup thinly sliced red bell pepper
Heat remaining tsp oil in a separate skillet; saute mushrooms over medium heat until golden brown. Stir in bell pepper; add salt & pepper if desired.
When chicken is cooked through, place mushroom mixture over chicken; cover and simmer an additional 5 minutes.
Great served with whole wheat pasta, baked asparagus & tomatoes.
