Ingredients

1/2 cup Silk Light Plain
0.25 cup honey
1 fresh banana mashed
1 cup equal (sucralose sweetner, measures cup to cup for sugar)
2tsp Baking Powder
1tsp Baking Soda
2 cup Whole Wheat Flour
1 cup Oats
2 Large Eggs
2 tsp Cinnamon
1/4 tsp salt
1 cup granola of choice (low fat, low sugar is best)
1.5 cup grated zucchini
1tsp Vanilla

Directions
Preheat the oven to 350F.
Combine flour, baking powder, baking soda, salt, oats, equal and cinnamon in a large bowl. Whisk. Add eggs, silk, honey (melted), mashed banana, vanilla, and grated zucchini.
The best way to mash a fresh banana is to microwave for 30s after slicing and mashing with a fork.
Pour into a greased loaf pan and bake at 350F for 55 minutes, or until a toothpick comes out clean.
Serving Size: Makes 1 Loaf which can be divided into 12 thick slices
