Lentil Soup for the Slow Cooker

Ingredients

    4 Med carrots sliced
    small onion chopped
    tsp ground cumin
    1/2 T adobo seasoning
    1 can 14-14.5 oz diced tomatoes
    1 can vegetable broth (1.75 cup)
    1 cup dried lentils (red look nice)
    1 bag (5 oz) baby spinach

Directions

Mix together ingredients in slow cooker, except spinach. Cook on low for 5 hours. Add spinach and let sit about 10 min. serve with parmagean if needed.
