Banana Banana Bread

Introduction

Preheat oven to 350/Prepare Pan - dry ingredients are mixed in 1 bowl, the wet in the other and mix together at the end. You need to cut it thin to get 18 slices but it is rich, so a thin slice is nice. Ingredients

    2 Cups All Purpose Flour
    1 tsp baking soda
    .25 tsp salt
    1/2 cup butter softened
    3/4 cup brown sugar
    2 eggs
    4-5 bananas (2 1/3 cups)

Tips

The original recipe called for 60 minutes, I found 50 is more then enough. I would test at 40 (toothpick or fork) to see if cooked.
You can add raisins/walnuts/cranberries if you like, I have, but not when calculating this recipe.


Directions

Cook @ 350
Spray loaf pan with non-stick spray
Mix flour/baking soda/salt in one bowl
In seperate bowl mix brown sugar with butter
Beat 2 eggs - add to sugar/butter mixture
Mash bananas - add to wet ingredients.
Blend banana mixture into flour mixture (mix to moist, do not overwork flour)
Pour into prepared pan
Bake for 50-55 minutes
Let cool for 10 minutes
Tip onto wire rack

Serving Size: Makes 12 slices
