Slow Cooker Italian Chicken-Lentil Soup

Introduction

I took a Betty Crocker Slow Cooker book and fiddled with the recipes that looked appetizing - substituted healthier ingredients..removed ingredients I don't like..I wanted to see how this would calculate. Number of Servings: 6

Ingredients

    2 c. carrots, chopped
    1 c. zucchini, chopped
    1 onion, chopped (1/2 cup)
    1 cup dried lentils sorted, rinsed
    4 c. low sodium chicken broth
    1/2 tsp. garlic salt
    1 tsp. black pepper
    1 lb. boneless, skinless chicken thighs
    1 can (28 oz.) diced tomatoes, no salt added
    1 c. mushrooms, chopped
    1/4 c. basil, chopped fresh

Directions

1. Spray cooker w/cooking spray. In slow cooker, mix carrots, zucchini, onion, and lentils, broth, garlic salt and pepper. Top with chicken.
2. Cover. Cook on low 5 to 6 hours.
3. Remove chicken to from slow cooker to plate; shred, using 2 forks. Return to slow cooker. Stir in tomatoes, basil, and mushrooms.

Serving Size: Makes 6
