These easy to make mini crustless quiches are healthy and yummy! Plus, they're super versitile. You can use it as a base and add whatever suits your palate. These easy to make mini crustless quiches are healthy and yummy! Plus, they're super versitile. You can use it as a base and add whatever suits your palate.
Number of Servings: 12

Ingredients

    8 egg whites
    2 eggs with yolks
    1/2 cup shredded cheddar or Mexican blend cheese
    1 cup Mango Peach Salsa
    1 can pinto beans (drained)
    2 cups shredded fresh spinach
    1/2 Tablespoon No Salt Seasoning

Tips

You can substitute shredded zucchini for the spinach and you could probably substitute other veggies, although I haven't tried it other than the zucchini. Other salsas woulf probably be good too. It really is a verstile recipe, so give it a try with what you have on hand.


Directions

Preheat oven to 350 degrees. Mix all the ingredients together. Pour evenly into muffin pan (be sure to spray the muffin pan with Pam). Cook for 30 minutes.
