Rice Pudding

Ingredients

    1 C Brown Rice
    2 C Milk
    3 packets Equal
    3 T honey
    1 T orange zest
    1pinch of salt
    1/4 t vanilla (optional)
    2 T heavy cream (optional)
    water - if you want to make a creamier texture

Directions

Combine all ingredients in a saucepan with lid. Reserve water for last step. Simmer on med-low for 45 mins. Check for doneness. Brown rice stays a little firmer than white rice, making this dish less creamy but with a much lower glycemic rating. Add a little water or half and half at the end to make it creamier. Serve warm or cold.
