Ingredients

    8 oz pck cellophane (mung bean) noodles
    2 tbsp olive oil
    1 med onion, chopped
    1/2 med green bell pepper
    1 roasted red bell pepper
    4 cups shredded cabbage
    1 sm carton of grape tomatoes
    3 cloves of garlic, minced
    2 tbsp soy sauce
    1/4 cup veggie stock
    salt and pepper to taste
    1 tsp ginger
    1 tsp onion powder

Directions

Place cellophane noodles in a heat proof bowl and add boiling water. Let sit 20 minutes then drain. Meanwhile, stir fry veggies in olive oil until tender. Add grape tomatoes and garlic, salt, pepper, ginger and onion powder. Next add veggie stock. Serve over cellophane noodles. Makes 4 large servings.
