Ingredients

    1 1/2 pounds turkey cutlets, pounded thin
    1/4 teaspoon pepper
    3 tablespoons lemon juice
    3 tablespoons minced fresh parsley

Tips

pork tenderloin is easily substituted for turkey cutlets


Directions

preheat covered skillet to 325 degrees
sprinkle pepper over cutlets
cook cutlets 1-2 minutes per side until brown
remove to bowl
add lemon juice and parsley to pan drippings and scrape all brown bits
turn off skillet
return meat to skillet and spoon sauce over


Serving Size: Makes 5 to 6 one-quarter pound servings
