Bread, High Fiber Whole Wheat

Number of Servings: 20

Ingredients

    300g (just over 2 cups) fresh ground flour
    1c wheat bran
    4 TBS ground flax
    4 TBS flax seed
    1 TBS instant yeast
    8g (2tsp?) salt
    290g (1.25c) water
    30g melted butter
    30g honey


Tips

Sorry about the mix of volume & weight--I'm adjusting a baker's recipe.


Directions

Combine dry ingredients except flax seed. Combine wet ingredients. Add dry to wet and mix. Let sit 15 min. Knead 20 min (or use dough hook & mixer). Knead in seeds during last 5 min. Rise 1 hour. Form loaf. Rise 30 min. Bake at 350 for 45 min.

Serving Size: Makes 1 loaf (about 18 slices)
