Introduction

A delicious and spicy blended soup that is super healthy. Heat on low until it reaches a warm temperature to keep it "raw" or simmer to desired warmth. Number of Servings: 3

Ingredients

    1 Red Bell Pepper
    1 tbsp Curry powder
    1/2 tsp Chili powder
    1 green Onion
    1 clove Garlic
    1 Carrot
    1/2 ripe Haas Avocado
    1-2 Cups Water (or more, to desired consistency.)

    Salt and Pepper to taste. May also incorporate Mirepoix or a Concentrated vegetable stock to bring out the sweetness of the peppers.

Directions

Wash and combine all ingredients in a blender. Blend until smooth, then transfer to a stovetop pot. Stir on low heat for 10 minutes until fully warm (for raw) or simmer for 20 minutes to cook through.
