Lemon White Wine Rice with Mushrooms

Introduction

We had a delightful rice in Charleston that I wanted to try with mushrooms in place of shrimp. We had a delightful rice in Charleston that I wanted to try with mushrooms in place of shrimp.
Number of Servings: 4

Ingredients

    1 cup brown basmati rice (rinsed)
    1 cup dry white wine
    1 cup vegetable broth
    juice of one lemon
    zest of one lemon
    1 clove garlic, minced
    1/2 tsp lemon thyme
    1/4 tsp black pepper
    4 oz oyster mushrooms, chopped
    2 tbs butter

Directions

Rinse rice until water runs clear (4-5 rinses)

Bring all ingredients, except the butter, to a boil. Lower heat.

Cover with a lid (wrapped in a tea tower to absorb moisture if you wish), and simmer on low for 35-45 minutes.

Turn off heat, rest covered for 10-20 minutes.

Add the butter, fluffing the rice with a fork to mix it in and give it lift. Serve warm.

Serving Size: Makes four 1/2 cup servings as a side dish
