Italian Vegetable Soup

Introduction

Number of Servings: 6

Ingredients

    1 cup chopped cabbage
    1 cup peas
    1.5 cups green beans (15oz can)
    1.5 cups diced tomatoes (15oz can)
    1.5 cups black beans (15oz can)
    1 cup pearl onions
    4 stalks celery (diced)
    1 tablespoon garlic powder
    1 tablespoon onion powder
    1/2 teaspoon italian seasoning
    1/4 teaspoon black pepper
    2 bay leaves
    1 packet Swanson condensed beef broth
    3 cups water
    1 tablespoon EVOO
    1/4 cup whole wheat flour

Directions

Saute onions and celery in EVOO until tender
Stir in flour to make a roux
Add everything else and simmer until cabbage is tender and serve with Parmesan

Serving Size: 6- 2 cup servings
