Introduction

Number of Servings: 8

Ingredients

    4 eggs-large
    1 cup rice milk
    8 oz pkg cream cheese
    1/4 cup coconut flour
    1/2 cup fresh tomatoes
    12 asparagus spears (optional)
    1 cup chopped broccoli
    1/4 cup onion
    1/2 tsp cayenne pepper (optional)
    1/2 tbsp black pepper
    2 cloves garlic,
    1 cup cheddar cheese

Directions

Makes 6-8 servings
Steam all veggies but tomatoes in steamer or rice cooker (or saute) until tender.
Pre-heat oven to 350F
Mix eggs, cream cheese, flour, and milk in blender or with electric mixer for 1-3 minutes
Spray 9x13 casserole dish or baking dish with non stick spray (no fat)
Combine all ingredients in casserole dish and bake for 45 minutes or until knife comes out clean when inserted.
