White Bean Salad

Ingredients

    1 can of white beans, rinsed
    1 cup of chopped tomatoes
    3 tablespoons of diced green onion/chives
    lemon juice (or 3 wedges of a lemon)

Directions

Rinse the white beans really well (not having them rinsed well is what gives you gas....not the beans themselves).

Divide beans into three dishes (approx. 1/3 cup each).
Chop tomatoes into small chunks (I use cherry tomatoes or roma tomatoes). Divide that into thirds (1/3 cup each) and pour over beans.
Top with 1 tbs each serving (3 tbs total) of diced green onions.
Squirt lemon juice over everything -approx 1 tsp or 1 lemon wedge per serving.

Serving Size: 3 servings -2/3 cup each.
