Introduction

This is my favorite salad. It's great as a main meal or served with BBQ chicken. This is my favorite salad. It's great as a main meal or served with BBQ chicken.
Number of Servings: 5

Ingredients

    1 bag of Dole Romaine salad - 7.5 cups total
    1 large granny smith apple
    1/2 cup craisins
    1/2 cup walnuts
    3 oz. Feta Cheese


    Vinegrette:



    1 TBS balsamic vinegar
    1 clove of garlic - minced
    1 tsp dijon musard
    2 -3 TBS extra virin olive oil
    1/2 - 1 tsp salt
    fresh ground black pepper to test


Directions

Assemble the salad:

In a gallon sized ziplock bag or medium bowl, add the romaine salad, a chopped granny smith apple, craisins, walnuts and feta cheese.

Make the vinegrette:

In a small bowl, add the balsamic vinegar, garlic clove, dijon mustard, stir, slowly mix in the olive oil, salt and pepper to taste.

I just add the dressing to the bag and shake, then serve.

Note: fresh strawberries also go nicely in this salad.
