Coconut Flour Flatbread

Introduction

This flatbread is not crunchy like regular bread when made into grilled cheese. It has a great flavor and wonderful bread-y texture. It gets more and more crispy as you add more butter. Number of Servings: 1

Ingredients

    2 T. coconut flour (I like Nutiva or Honeyville Brand)
    2 large eggs
    1/8 tsp baking soda
    1/8 tsp baking powder
    2 pinches of sea salt
    1/4 cup of any milk, I used unsweetened almond milk.
    1/2 T. coconut oil or butter, for frying

Tips

These are a great option if you want to make a grilled cheese sandwich!

If you like, add vanilla and cinnamon and top with grilled bananas, or strawberries and whipped cream.


Directions

Mix all ingredients, make sure there are no lumps. Let sit for a minute to get fluffy.

Melt some of the the coconut oil or butter in a pan over medium heat.

I recommend frying 2 flatbreads at a time, (about 1/2 the recipe). They won't spread much. When they get bubbly and brown, flip and cook the other side. REPEAT.

Eat.

Serving Size: 4 small size sandwich flatbreads
