Broccoli Stuffed Chicken

Ingredients

    4 4 oz chicken breasts
    1 cup cut broccoli
    1 beaten egg
    4 ounce container soft-style light cream cheese
    1/4 cup mozzarella cheese
    3/4 cup panko bread crumbs

Directions

1. Thaw chicken, if frozen. Rinse chicken and pat dry with paper towels. For stuffing, drain broccoli, pressing out excess liquid.

2. Combine egg, cream cheese, and the mozzarella cheese. Stir in broccoli and breadcrumbs.

3. Spoon one-fourth of the stuffing onto an end of each fillet. Roll up, securing rolls with wooden toothpicks.

4. Place chicken in a greased 2-quart square baking dish. Bake, covered, in a 350 degree F oven for 30 to 35 minutes.
