Veggie Quiche

Introduction

I couldn't find anything that was exactly like this, so I created the recipe so that I could track it on my food tracker. I couldn't find anything that was exactly like this, so I created the recipe so that I could track it on my food tracker.
Number of Servings: 6

Ingredients

    16 small eggs, whisked
    1 small white onion, chopped
    1 cup mushrooms, chopped
    3 cups spinach, lightly chopped
    2 Roma tomatoes, sliced
    1/4 cup shredded cheddar cheese
    2 Tbsp. salsa

Directions

Whisk the eggs and set aside. Chop all the veggies; add the onions and mushrooms to a skillet and cook until onions are soft; add spinach. Pour eggs over the mixture in the skillet. With a rubber spatula, constantly move around the side of the skillet, separating the egg from the skillet. Lift up the quiche from time to time and tilt the skillet so that the uncooked egg goes to the bottom. This makes the quiche cook more evenly. Flip over and allow to cook some more. Top with sliced tomatoes and shredded cheese. Serve with salsa.
