Tomato Pesto Pasta Sauce

Introduction

Ingredients

    1/4 cup Sun dried tomato pesto
    1/2 cup Greek yogurt
    1/2 cup cottage cheese
    1 can chicken with sun dried tomato sauce
    1/2 each bell pepper (red, yellow, and orange), chopped
    1/2 onion, chopped
    1/2 zucchini, chopped
    1-2 Tbsp EV olive oil

Tips

The first time I made this I had not made the sauce smooth so I had the curds of the cottage cheese showing, like you would in a lasagna. Not an issue if you do not mind.

Directions

grill the vegetables in olive oil with seasonings of choice. Blend the Greek yogurt, sun dried tomatoes and cottage cheese until smooth (adding milk to get desired consistency). Heat chicken with sauce until heated through. The vegetable and sauce can be served combined or separately on your choice of pasta.
