1/4 cup Sun dried tomato pesto
1/2 cup Greek yogurt
1/2 cup cottage cheese
1 can chicken with sun dried tomato sauce
1/2 each bell pepper (red, yellow, and orange), chopped
1/2 onion, chopped
1/2 zucchini, chopped
1-2 Tbsp EV olive oil
The first time I made this I had not made the sauce smooth so I had the curds of the cottage cheese showing, like you would in a lasagna. Not an issue if you do not mind.
