Kale and Feta Fritatta

Introduction

Very easy to make, divide into 6 portions for a simple, reheatable breakfast for the week at only 158 calories per serving! Perfect breakfast for people who have limited time in the mornings but want a hot breakfast.

I have begun making this every Sunday, and I divide it into 6 portions to carry me through Monday through Saturday. Reheats in the microwave quickly (be careful not to overheat), and with a piece of buttered whole-grain toast is a warm, hearty breakfast for under 300 calories!

Ingredients

    2 cups of chopped kale
    0.5 cup of crumbled feta cheese
    1 tbsp of olive oil
    8 large eggs, well-blended
    Freshly ground pepper

Tips

I find that the feta is salty enough that I do not need to add salt. If you have more time than I do, saute with chopped onion, or even bacon or ham, for more flavor before adding kale. I also have been meaning to try it with drained tomatoes for added nutrition; if you do, please let me know how it turns out!


Directions

Preheat oven to 350 degrees. Blend 8 eggs; set aside.

In cast iron or other oven-safe skillet, cook kale until wilted about 2-3 minutes. Spread around bottom of pan evenly, sprinkle feta on top. Turn off heat. Pour egg mixture over the top.

Transfer to oven, and bake at 350 degrees for 20-30 minutes, or until frittata is browned on top and cooked through.

Serving Size: Makes 6 hearty portions
