1 medium head cauliflower
1/2 C coconut milk
3 T butter
1 garlic clove
2 T coconut flour
Salt & pepper
Cut cauliflower into florets and let it sit for 5-10 minutes.
Prepare kettle and steamer basket or electric steamer as directed.
When the water starts to steam, add the cauliflower and garlic clove and cover. Set timer for 5 minutes.
Place all ingredients into a food processor and process until smooth. Or if you donít have a food processor add ingredients into a large bowl and mash with a potato masher.
If it doesnít seem creamy enough just add more coconut milk or butter.
